Chicken & Ravioli in Escarole Tomato Sauce


INGREDIENTS


½ lb fresh ravioli, cooked al dente

1 ½ cup of canned, plain tomato sauce

4 teaspoons of olive oil

2 cloves of minced garlic

2 full chicken breasts

2 cups of fresh escarole, cleaned and chopped

1 teaspoon of Italian seasoning

2 Tablespoons of Parmesan cheese



INSTRUCTIONS


1. Cut chicken breasts into bite sized cubes

2. Heat olive oil in non-stick medium skillet and saute chicken until no longer pink. Remove from heat and set aside.

3. In same skillet saute garlic.

4. Add escarole, tomato sauce and Italian seasoning.

5. Cover, lower heat and cook for 5-6 minutes, stirring occasionally.

6. Add in chicken and ravioli.

7. Heat thoroughly.

8. Serve with side salad and good Italian bread.
