POLENTA WITH FONTINA


INGREDIENTS


5 cups water or stock
1/2 teaspoon salt
1 cup polenta or corn grits
2 teaspoons extra-virgin olive oil or butter
2-3 tablespoons parmesan cheese (optional)

Fontina Cheese

Melted Butter

Salt & pepper


1. Bring water to rapid boil.

2. Add salt and oil or butter.

3. Slowly add polenta, stirring continuously with a whisk.

4. Lower heat and continue stirring in a clockwise motion with a wooden spoon for 20-30 minutes until mixture can hold the spoon upright on its own. (If using cheese, add it now.)

5. Lightly oil a pie plate or 8-by-8 pan.

6. Pour polenta into pan and smooth the top.

7. Let cool.

8. Once cooled, cut into 1" slices.

9. In an ovenproof buttered pan cover bottom with slices of polenta.

10. Cover that with a generous layer of Fontina cheese.

11. Top with another layer of polenta.

12. Brush with melted butter.

13. Lightly salt and pepper the top.

14. Bake in oven 475 until golden brown. Serve hot.
