PASTA FAGIOLI


INGREDIENTS

1 small onion, chopped

3 cloves of garlic

2 celery stalks

1 ½ cup canned tomato sauce

2 cups of cooked white beans

1 ½ cup escarole, chopped

2 tablespoons, dried basil

5 cups of vegetable or chicken broth

¼ lb of cooked small piece pasta


INSTRUCTIONS


1. Mince garlic onions and celery

2. Saute for 5 - 7 minutes on low heat until onions are transparent and tender.

3. Reduce heat.

4. Add everything else with the exception of the pasta.

5. Cover and simmer for 15 - 20 minutes.

6. Add pasta and serve.
