Pastada
(Spaghetti Pie)
This is a delicious crispy and spicy spaghetti pie. Originally created as a recipe to use up leftover pasta, this has become a favorite quick meal.
INGREDIENTS
2 lbs. of cooked spaghetti
6 eggs
4
cloves, finely chopped garlic
2.5 cups ground parmasian cheese
1.5 Tablespoons of freshly chopped or dried parsley
25 - 30 pieces of small cut pepperoni
Black pepper to season
INSTRUCTIONS
1. In a large mixing bowl, combine the ingredients and mix thoroughly with your hands.
2. Grease an appropriately sized baking pan (the deeper, the better)
3. Pour the mixture into the baking pan and level off.
4. Be sure the pepperoni is spread out throughout the mixture.
4. Sprinkle grated parmasian cheese and black pepper on the top.
5. Preheat oven at 325 degrees.
5. Bake for 35-40 minutes or until done. (To check doneness, stick a clean knife into the center of the pie. If it comes out clean, the Pastada is done. If you want extra crispy, continue baking for a few more minutes to brown the top.
