Fortini Pasta Sauce



INGREDIENTS

2 packages of hot and/or sweet sausage

5 cans of whole tomatoes
1 lb. lean hamburger

1 medium onion, diced

5 cloves of garlic, diced

Season: Oregano, basil, parsley, rosemary, black pepper

1 bay leaf

Pinch of sugar
2-3 Tablespoons of good Italian wine

1 or 2 small cans of tomato paste (to thicken sauce if needed)

1 batch of Fortini meatballs



INSTRUCTIONS


1. Fry sausage in skillet until cooked and brown. Set aside.

2. Saute in skillet the hamburger with diced garlic and diced onion.

3. Open tomato cans and pour into large sauce pan.

4. Using hands, crush the tomatoes until all are mostly crushed.

5. Begin to simmer tomatoes on stovetop.

6. Add hamburger mixture.

7. Add to your taste the seasoning spices: Oregano, basil, parsley and black pepper.

8. Add the bay leaf

9. Simmer for 15 minutes, covered.

10. Add wine and sugar.

11. Add sausage and meatballs.

12. Simmer 25 minutes, uncovered.

13. If sauce is too thin at this point, add up to 2 cans of tomato paste.

14. Check seasonings to make sure it is to your liking, add if anything is missing.

15. Serve over Al Dente pasta, use in lasagna, etc.
