JASON’S GAGUTZ RECIPE


INGREDIENTS

1 large onion, chopped

6 cloves of garlic, minced

1 cup of water or broth for sautéing

2 medium eggplants, peeled and cut into 1 inch chunks

2 medium zucchini, seeded, peeled and cut into 1 inch chunks.

1 lb ripe plum tomatoes, peeled and seeded

2 Tablespoons of tomato paste

½ cup of good red wine. (medium to mildly sweet works best)

2 tablespoons of Italian seasoning (dried)

Salt & Black pepper to taste.


INSTRUCTIONS

1. Saute the onions, garlic, eggplant and zucchini in broth until just tender.

2. Place in large dish and cook in a 400 degree oven for about 30 minutes or until dry.

3. Transfer to a soup pot.

4. Add tomatoes, tomatoe paste, wine and Italian seasoning.

5. Cook until hot

6. Puree, preferably with a blender.

7. Add salt and pepper to taste.
